I can't decide whether to become a Pistoleer or a Swordsman, so which would be better? Also is swordsman good only in PvP?

Go with swordsman over pistoleer. Pistoleer is alright when combined with one of the hybrids (Bounty Hunter and/or Smuggler) but Swordsman is the far better stand-alone profession. As for the PvP thing... I think you're confusing Swordsman with Fencer. Swordsmen are largely considered the best PvE'ers in the game.
