but the one's that do cross over don't stack right? they just replace your mhs defenses?

Right. Melee defenses (and ranged defenses) are non-weapon specific, so they will stack. Otherwise, why would melee profs have a ranged defense mod and a ranged profession have a melee defense mod. Thus, as a Master Rifleman/Master Swordsman/Master Brawler, I have a +67 to melee defense, where as, if I drop Rifleman, it is only +27. Now, the difference is that, because they fixed the melee to-hit bonus against rifleman, if I am holding my rifle, I only mitigate some of the huge to-hit bonus melee gets. But if I switch to sword, I get the benefit of my full +67 to melee defense.
On the other hand, Dodge, Counterattack, and Block are all weapon specific, so I get no Counterattack benefit from holding my rifle nor any Block benefit from holding 2H swords.

I knew I forgot to post some where!
Currently I'm at 1-0-0-3 in TK, MHS, Master Brawler, and 1-0-0-0 in fencer, and Last I checked before mod clothing I had 126 Melee def...
If it *is* capped at 125, To hell with unarmed combat, I'll just go master Medic or some support class
