B.E. - Cloners from Ep2
Tailor - There was one on cloud city, how else did leia get her new digs. They weren't on the falcon
ID - Again on cloud city, leia had her hair done.
Weapon/armorsmith - The prop guys off in the back of the stage. All those blasters and ST armor comes from somewhere. The fact no one isshownmaking them in the movies doesn't matter since they are all over the place in the movies.
TKA- Yoda, TKA/Jedi hybrid. Hehad some spinkicks going on.When 900 years old you reach,1200 skill points you will have.
Chef - Yoda, probably not 12 points and doesn't have BE addivitives, but he does cook.
Architect - ILM digital artists. Not on screen, but their buildings are.
Swordsman - Gamorrian guards
Doc - Doc by the bacta tank in ESB at hoth
Combat Medic - Random dude in the trench on hoth throwing stuffthat everyone was shooting at first. 
Artisan - Owen Lars, water surveyer/miner
Ranger - I think wicket would count. Probably some of the gungans would count too. They were CHs at the very least. Don't worry, rangers are more messed up than smugglers, hence why wicket counts.
Fencer - No idea. I don't remember anyone using even a knife.

The Cloners were not BE, Otherwise We would be making Humans.

Put Jango in Pistoleer, so Boba in Carbineer. Boba also has a bit Rifleman (he uses a disruptor rifle on long range)
both Fetts are also Commandos, the Mandalorian Armour has a flamer and a rocketlauncher with the backpack.
So i would give Jango a bit Squad Leader.
More Commandos are the already mentioned:
- Rebel Troopers on Endor.
- The Clone Army would fall into many combat-classes, not just Commando
Bio-Engineers are definitly those longnecked aliens from Kamino.
Zam Wessel is also Rifle...something...shapeshifter...

Fun thread! But, isn't using the prequels cheating? this game is 'supposed' to be set in OTC, ie, no jedi (yeah, I know). If they are included, Kamino cloners certainly are BE, if cloning isn't bio-engineering, I don't know what it is- voodoo 
?
?My entries (and boy are they a stretch):
Squad Leader - Darth Vader. Led the squad on the Tantive IV, led the snowtroopers into rebel hangar. All the troops move a little quicker when he's cracking the whip 
Squad Leader - General Rieeken (Hoth base)
Marksman - Zam Wessel with that big ass gun she shot obi wan with. Maybe rifleman?
Chef - Wuher (Mos eisley cantina bartender)
Carbineer - uh, Boba Fett?
Droid Engineer - Ugnaughts, Chewbacca (rebuilt 3PO), Jawas
Fencer - Luke skywalker, fencing with a legbone of a rancor!
Combat Medic - Leia, after Luke got thumped by Vader, she set him up in the Falcon (ESB)
Image Designer - Yoda. He did a stat migration for Luke on Dagobah, from whinyass farm boy to whinyass jedi
Scout - Han Solo, harvested taun taun guts for Luke on Hoth.
Commando - Han Solo ("Throw me another charge!"- Endor)
Architect - Yoda, who else built his house on Dagobah, sized perfectly for him?
Brawler - Han Solo, busted Lando with /unarmedlunge1 in Bespin prison.
Ranger - Han Solo, managed to track Luke on Hoth

Come on, don't rip poor Greedo off anymore. He was the one that was bugged and did not get to shoot first on Han. How on earth did Han ever get a TEF on Greedo? That is what I want to know. Han was an exploiter
Edit: Oops forgot maybe it was Lag that just never showed Greedo's shot until we updated the hardware so we actually see Greedo shoot first LOL
