Jade would waste her for a number of reasons.

1. Whilea personal energy shield MIGHT stop a LS attack it wouldn't stop the force, or anything thrown by the force.

2. Borg nanoprobes would be useless. According to the NJO books, Mara was able to keep a bio-enginneered plague in check using the force.

3. 7 of 9 has neither of these weapons in her arsenal since she was removed from the collective. All the logic in the world is useless to a red head wielding a lightsaber with the force as her ally.

Mara, because I detest 7 of 9 and Voyager in ways that cannot be described. Star Trek died for me with Voyager and Enterprise. And Mara Jade just rocks, yo.

Really, cause to be quite honest I think that Voyager was possibly the best ST series since TNG.

I think everyone here is really missing the big picture.

Mara Jade would win. I think the mud or Jello might interfere with all of Seven's mechanical implants.
