Someone could probably use the Shipwright profession and the selling of ships/components as a report for an economics or business class or something.
When the swoops/speeders first came out, they were really expensive. As time went on the prices leveled out and now the prices are fairly consistent. Same would probably go for doctor buffs. At this time doctor buffs are probably consistently 12-15k depending on quality.
The same thing will probably happen over time with Shipwright. Hopefully the Shipwrights can all decide on some sort of pricing scale for different level ships and components. It won't happen in the short-term, but in the long-term it should even out.

The market will determine the price as supply increases and demand subsides. Equalibrium will be met in the not so distant future. I give prices between 10-12 weeks until prices get close to their final market points. The issue of supply will be interesting to watch. I'd love to see SOE give us ongoing "financials" for Shipwrights. We could see how many units and what they went for...
If Shipwrights find that the crafting grind is too cumbersome the pricemay stay high. The demand is also interesting as many beta JtL people found space boring. With adequate public transportation many may avoid the new space race keeping ship prices high.
