Depends on the market for your server, but from my own experience I didn't actually sell anything lower then tier 1 ship for the bazaar limit of 20k but the sales were slow so reduced down to 12.5k. Only thing was I didn't start selling ships till I had a few boxes from Missile and weapon sales so I already had a few experimentation points available.
I would definately say though that at the early stages prepare to make a loss for quite a whilse as the ships need alot of resources but you wont b able to charge the going rate as the mass will be lower than other, more experienced SW's.
All IMHO of course ...

I have recently decided to make the move from a combat role to a shipwright. My question is, since I will soon be grinding out low level ships what is a good price so I don't undercut the market?

Personally, I would use a SW buff and experiment. You will get there faster and be able to recoup the resource cost through sales of higher level stuff. Most people use the starter ship until they can use midlevel chassis because it is not worth the cost to keep changing ships when you can grind the next tier in a few hours.

My advice: grind with the practice mode on until you get the entire line of chassis. Then make an even number of chassis excluding the level one ships (scyk, z-95, tie light duty) and stock them on your shipwright vendors when you make components. 4-5 cpu works for me, but it really depends on your servers economy.
