I might be mistaken, but YPR is being removed from engines and based only on chassis.

Actually there were 2 sets of YPR on the engine prior to this patch. One of them was physical limit factors depending on the chassis. Which meant it was meaningless on standalone engines. So they removed thoseto prevent confusion. The YPR thatare leftare the correct values for the engine.
I just made a Mark IV engine and with 5 points each in YPR I got them all to 55.Looted level 2 enginesoften has higher YPR than this, but can't match the speed. The main problem is that there are too many useful experiment lines on engines to match loot. And there are too few sub components to help us out. Having a component which improves the YPR would help out a lot, especially if theyare all joined in a single experiment line on that component.
Crafted engines are currently only useful for speed and not maneuver.
The critical stats for maneuvrability are your engine's Pitch Max Rate and Yaw Max Rate that will affect how fast you can turn (roll is not that important). Right now experimentation does not affect these stats much and looted and RE'ed engines tend to be better.
The Pitch Acceleration and Yaw Acceleration are based on the chassis and tells you how "fast" you will reach your maximum rate of turning.

Except that we rarely get to truly dogfight any more. Mainly, it's just jousting.
