Do I want to buy a chassis with high ship mass or low ship mass?
Low? as the more it weighs, the slower it is?
High? cause u can cram more stuff into it?

This is the correct one.

The more it weighs, the less chassis hp. A ship 10 units from max mass performs just as well as a similar ship with the same engine that has 10k of unused mass.

High mass to get more in BUT most low mass ships are faster.
Look at tir 4 ships;
Tie Advanced Mass 65k acc 40 dec 60 pitch 300 yaw 300 roll 150
A-Wing Mass 65k acc 40 dec 60 pitch 250 yaw 250 roll 125
Ryhxyrk Mass 190k acc 35 dec 35 pitch 100 yaw 100 roll 50
The privateer ship has a lot more mass but it could not turn or keep up with the speed of the imperial or rebel ships.
You sacrifice mass for speed and maneuverability, or you sacrifice speed & maneuverability for mass to have more equipment.
Which is better depends on how good you are and what you feel comfortable with.
