I"m at a point where I can either start grinding SW with my human toon or delete it and start an Ithorian fresh... what I am wondering though is how much difference would there be between what a human and an Ithorian can make?

Id say go with the one that you think fits the role or most prefer, definately dont pick a race on stats your going to be having to look at whatever you choose for hours on end

I myself regret not being anIthorian.. My speciallty has always been enhancedshields. My toon can't get much uglier than he isnow anyway,., until cybernetics go live.
