When I was in beta, every YT-1300 I built did not have a dish. I built 3 or 4 of them when I could. However, some folks said they had player crafted YT-1300s that did have the dish. If this is true, how can I get a model with the dish? Is ita 1 to 10 chance one will be crafted with a dish? I'm not sure if anyone can answer this question.

The dish could represent a component in the ship maybe??
That's likely.
In Beta, I recall seeing some Y-Wings with some wicked cool looking engines slapped onto them, they were bent up from the main body slightly, almost like warp nacelles on certain Star Trek ships, without looking at all Star Trek.
When I first saw that, I thought that was the "Longprobe" variant and I worked my tail off to get that ship, of course, it wasn't the Longprobe.
Recently, I have seen X-Wings that do not look entirely like X-Wings. Different styled cannons, and engines then the stock canon X-Wing from the movies.
Perhaps the dish has something to do with a high-end countermeasure or shield system?
Personally, I really like the slight variations the Devs have put into the starships, seemingly based upon equipment installed.

You know, you may have it! I can't wait to try this out!

Are you sure these aren't just different "Styles" or "Variants" of the ships?
I know for Neutral ships the different variants looks radically different (1 wing vs 2 wings, long front-end vs. short front-end)
Sooner or later, we'll be able to put together a complete collection of pictures of the different variants of all the ships.

They aren't different variants.
As a shipwright, you can make only 1 style of each Rebel or Imperial craft available. If you are crafting Neutral ships, then you can choose between Style 1 or Style 2 before you start the crafting process.
When you own a bare Y-Wing chassis, the ship has no engine pylons visible, just like the base Z-95 chassis has no engines or weapons visible. As you place those items onto the ship, those items appear on the model you see in the Starship management terminal.
In time, we may see some images of what component level or other mitigating factors cause the 'dynamic' portions of the Rebel Starships to appear as a variant.

When I made Mk IV engines for my guildie, and he placed them in his Y-Wing, the engines took on this effect.

Yep I got those on my Y-Wing LongProbe.... They look evencooler on an X-wing tho...., and it's true those engines are a cool reward for those who completethe 2nd from the last tier 3 mission.
