besides gather resources, does increasing hunting levels give any benefits? It says that you can tell more about animals, etc. So can I see exactly how many HPs an animal has at hunting 3 or anything like that?

You can tell how many HP an NPC has at any time. Just hover your mouse over the appropriate bar in the HAM when you have them targeted and it will tell you in a fly-over help window. You will be able to tell if the creature will likely death-blow you, what kind of Harvest resources it has, it's general resistances and it's challenge level.

Increased hunting also gives you bonuses (currently ranged only, I believe), to hit critters.

I believe the to-hit bonus is both ranged and melee. It's a general "creature to-hit" bonus.

Oh, okie. I seemed to remember seeing threads on melee types asking to get the to hit bonus, too. Don't have any personal experience with it, myself, since they can have my blaster when they pry it from my cold dead fingers
