instead of hitting ~3 to harvest, hit ~ and move mouse over harvest... it will ask you if you want to harvest bone, meat, or hide (for those mammal type animals and some others)

All I ever harvest off animals so far is skin and meat, no bones, which I need to get my first camp and to build traps. Any ideas?
