This has probably been asked a million times before, well here's 1000001:

Is there a command that will stack similar resources in your inventory? I find it somewhat annoying that I have to alt+tab back every 3-4 minutes to move mollusk and crusteation meat to my backback, especially since harvesting critters and surveying automaticaly stacks your resources.

Nope. This is the same for shellfish as it is for ever other kind of resource...you've gotta manually stack it.
