NOOBIE QUESTION ALERT:

Does progressing up the Hunting Tree give you information about Creature HAM?

If not what is the skill Creature Knowledge used for?

Anyone can see a creature's HAM. Just hover your curser over the bars in the target window and it will say something like 1000/1000.

As for creature knowledge, it's for useful things like how much hide/meat a critter gives and what kinds, how fierce the creature is, whether or not it deathblows (Killer: 1 does), challenge level, and in the Ranger Bioscience line, special attacks and base to-hit.
