Herb and Carn mostly. You can make pet stims with fish meat as well.

Herbivore meat -> Adv Chemical Release Duration Mechanism (OQ / PE)
Avian meat -> Enhance Packs (OQ / DR)
(this is for docs)

BE don't care about type for some uses, just OQ+PE+FL (and with some other ingredients, PE and FL matter MORE than OQ). We can also use Dath insect meat for Pet Stim-Cs (far easier than the fish for Ds).

Minor correction. OQ matters more than PE and FL on all of our tissues.
The kind of meat does not matter for the most commonly used tissues, although we do have specialized uses for everything except for avian. We can also use milk, so you can double your take if you milk herbivores.

Avian and carn mean I believe. The bigger and tougher the creature, the more likely he will drop more meat.

docs usually want herb and avian meat
tailor want large quantities of wooly hide
armoursmith leathery/wooly hide
chefs carnmeat
bio-eng fish meat
no so much the meat type but the stats and the stats are always shifting best bet is to watch the forums or ask a player in the current profession where and whats the latest spawn...
as for tailors im pretty sure they dont care for what the stats r they just need the material.

Doctors need:
Avian, high OQ (mainly), high PE, high DR. Two or three months back, there was an exceptional Corellian avian spawn on Ahazi, and I sold 3k of it for 1 million credits. I kid you not. It was 900+ OQ and PE and 850+ DR. Crafting docs were paying 300 cpu for it. It was insane. Carrion spats, gulginaws, and even howling plumed rasps were being hunted to extinction on Ahazi. My harvesting droid paid for itself several times over during a 10 day period that I spent nearly all my time hunting avian on Corellia.
Herbivore, high OQ (mainly), high PE
Combat medics need:
Insect, high OQ (mainly, high PE.
Tailors will take any kind of hide you can find. Large stacks of terrible hide that most would not care to look at, tailors will take gladly. Much of my player-crafted wardrobe is a direct result of keeping my favorite tailor well supplied with hides. She crafted some exceptional, eye catching ensembles for me that I still get compliments about when I'm out and about.
Architects need it too, but want wooly, regardless of quality, as some furniture (couches, beds, both high demand furniture items) schematics require wooly hide.
Armorsmiths LUST after high OQ wooly hide. Again on Ahazi, this time Naboo, armorsmiths in the last week have been offering 125 cpu for Naboo wooly. This stuff was quite exceptional, some of the best wooly ever to spawn in the game on any server. I anticipate that eventually scouts who have squirrelled away some quantity of it will command 250cpu prices for it, especially if there is a drought of decent wooly. They also go gurk over high OQ Lok leather hide.

Check out this site: http://www.swgcraft.com/home.php
I find this to be a weath of information. You can click on the Resource Usage link and find out what schematics call for what type of hides/meat and which attributes are the most important.

AS a BE, pretty much any meat with good will be a great help. It needs to have OQ/PE/FL. apparantly OQ counts for around 50% followed by PE for 30% and the rest Flavour.
I tend to work more for tailors than chefs, tailors treat you better so they get beter service.
I use Carnivore meat as my main type. its so easy to get hold of that its great for any slot that doesn't need a special type of meat.
Wild meat is just a little harder to get than carnivore meat, how ever with the Quenker boom if you know where to look you can find it.
The meat I tend to have trouble finding in decent quantities is Insect meat and Reptilian meat. I have to piece together the tiny blocks of 200 or so on the bazaar to make even a small run of tissues.
