Do you get more xp and resources per harvest if you have higher hunting skill? I have enough xp for hunting II but not sure I want to get or wait and get exp III. i'm just wondering if hunting skill would be more beneficial.

In my experience, yes. The higher your hunting skill, the more resources you harvest from animals. Also, the more difficult the creature, white, yellow, red, the more resources and exp you get from harvesting it.

I have all Scout skills at 2nd level, and I now see what kind of hide and meat creatures give, if I "Examine" them.
