It doesn't matter what you harvest. As far as I can tell, you get 50 scout xp per white, 42 per dark blue, and 36 per medium blue. Just find animals that you can kill in 1-2 shots from your weapon. That way you can keep the slaughter going without resting and maximize your xp/minute output.
