The biggest creature i've solo'ed has to be the fambaa on Naboo at around Level III novic scout. Other then that, it would have to be Sharnof Bulls and Bolle's.

I once ran into a Krayt Dragon in the Tat Dune sea while I was solo.

I solo'ed a giant Torton on Rori. Somehow he got stuck on something.

I killed a large crystal snake on Yavin. He got stuck in a wall and it took me a half an hour to kill him with my crappy rifle.

I would have to say the Fambaa as well, if like scrag said, your not only inquiring about those that we have beat. Normally I wouldn't attack a creature such as this solo, but it's sheer size was quite impressive and I had to give it a chance.

The most powerful creature I've soloed (without a bot) was a raging Falumpset on Naboo. These are tough, but doable, with a mix of mindshot, headshot and warning shot. Fambaas I can probably handle at the next level of rifleman, but for now they don't respond well enough from my warning shot to be able to take them down with a good chance of surviving.

I solo'd a nightsister's Rancor last night. He took me about 30 mins and severall db's, but eventually his b-run ran out and we was slower than a snail and I just kited him, heh.

Did a rogue fambaa last night, not sure what his difficulty is compared to the fambaa or if its the same, i've done some normal fambaas too, I'm a 2 hand swordsman though. I had to adhesive mesh him once to rest my mind other than that i was ok. Of course I was all hopped up on spice and tattooine sunburn. I do bolle bols normally solo, good ranger and sword xp. Giant baz nitches are much easier than the fambaa seeing as they have no armor, so I liked those until everyone and their brother hit dathomir. I had to do the fambaa for the emporer's retreat mission set, that turned me on to how much good xp they are. Its a challenge but makes the grind a lot of fun since there is always the chance you can die as opposed to doing whites or yellows. Great trapping xp too, about 505 per throw on the rogue fambaa I beleive, same for harvest I think.

Rogue Fambaas are meaner. But they only spawn in single groups. Fambaas can spawn in large nests, which are fun to farm.

I haven't been off Tatooine yet (well, if you disclude a 5min trip to Naboo), so the biggest thing I've ever soloed is probably a mountain worrt or rogue bantha

I have yet to solo a mountain squill yet.Too hard to find them, butwhen I do, I'm busy running off somewhere.

Gnort... no seriously... HEY! STOP LAUGHING AT ME...

snorbal's on lok 10000+ HAM and bantha's on tatooine. good hunting.

For now that's be Tortur Bulls and Huf Dun Bulls, butI had to use my P-darts and Adhesive traps to keep them off me. Sometimes one would catch up to me and take over half my health in one stomp.
