I was just wondering how and if mind shot bleeds stack

Mindshot1 + Mindshot2 will stack, but Mindshot2 + Mindshot2 will not.

I don't know if it would stack if you have two riflemen hitting with Mindshot2.

No they don't. If two different Rifles hit the same target with MS2, the the 'best' hit would stick. If you hit a target with a better damaging MS2 after already sticking one, then the better one will stick.
