Is there a cap on accuracy when equiping certain weapons? According to CTRL C, my accuracy with a rifle is +331 and according to my math I can get to +362 but is there a cap before the +362 ?

Through the game mechanics the accuracy cap is 700 or 750 I believe. There are other caps as well such as +25 from skill tapes that you may have capped on.

right with aim, and steady aim, rifles with enhanced accuracy, accuracy foods, skill tapes (+25 general and + 25 specific) and basic profession accuracy enhancements you should be able to get well over 700 accuracy (which still leaves you shy of matching the defense of a defender Jedi)

yes. To elaborate accuracy only has a cap in relation to your targets defense. There's no difference between 500 and 700 accuracy when shooting at a target with 0 defense, but there is a marked difference when shooting at a target with 500 defense.
