Everyone seems to be a MBH, is that because it adds another play element of hunting Jedi?
Bounty Hunter makes for a very strong addition to any of the ranged professions. It gives good defense (coupled with Duelist Stance), good general ranged mods, and some really good specials. Also you get a certification for Assault Armor which is for the most part the best PVE armor in the game.
Should I ditch my efforts to be MP or MC and go MBH?
This choice is purely yours but I've found myself personally unable to bring myself to drop Master Bounty Hunter. The loss of defenses/skills/mods really just doesn't seem worth pursuing another profession.
Is there still enough interesting to do without hunting Jedi?
There's PLENTY of interesting things to do without hunting Jedi and I have to admit that hunting Jedi really isn't all that fun. For every 5 missions you may complete one due to housesitters/getaway drivers/space sitters/Kashyyyk grinders.
GCW, Dueling, etc, is that enough to continue to make the game intersting?
I don't even participate in the GCW anymore - the side with the larger gank squad wins. Dueling can be fun but where's the point in that really?

Thats not true. While a BH can cap all 3 ranged, they will only be able to cap the 1Mil XP in the 1 skill they are Master in, while the rest will be capped lower...while a Master Rifle/Carb and Pistol4403 will be able to cap the 1Mil on 2 of the ranged and the lower cap is only on 1.but we are talking 100K xp here...peanuts. Your arguement isn't even worth being a consideration in a template.
As a Master Rifleman/Master Bounty Hunter I could cap my Rifle XP at 1200k and my Pistol and Carbine at 900k. I never reached my Combat XP cap however.
As for adding melee, not worth it in my mind. You're basically limiting you ability to fight ranged and limiting your ability to fight melee by trying to combine the two. TKM is nice for the def but honestly you're better off with the added abilities and mods from another ranged profession.
As for the Healing, keep Novice Medic and get some efficiency clothes and some Chef food like citrus snow cake. I heal for 600+ at Novice Medic, and couple that with the Stim Ds and ruby, well, that enough healing for almost anybody.

Then a Master Rifle/Carb Pistol4403 would have a 1.2Mil cap on Carb and Rifle and 900K with Pistol, 300K better than a MRM/MBH, but still only 300K diff, not even worth worrying about. Yeah, a combat template with melee and ranged is not like it used to be. Now it is just 2 wasted halves....not one complete.
