What's considered "hig quality" meat/hide/bone and what's considered "low quality"?

And how do you dertermine how much to charge per unit?

because it all seems pretty random to me and i feel i'm not making the money i should be making

This is going to require some reading, but check out this post. It will give you an idea of what professions need what resources, and also what properties of the resource are important to them. You can also search the forums for this type of info.
