Lets treat this like a proper business proposal first off.
What market are you interested in servicing? Doctors? Artisans? 'smiths?

Or are you just going the wholsale route and grabbing lots of the best resource in this particular shift?
Then you might want to check what organics are 'uber' on your server this week. swgcraft.com and swgcreatures.com are both useful here. Also, refer to the recent JBMatt post on how the organic resource shifts vary from the inorganic ones. Some important information there.
Of course, then you're going to need to sell your resources on. How are you going to get your goods to the market? Have you invested some SP's in Artisan business III so you can have your own vendor? Are your guild going to sell them on your behalf or are you going to hawk your wares on the auction channel and outside C-Net?
The problem in giving you a focused answer is that your question is, in itself, pretty open and vague. Get three rangers, ask which resource selfs best and you'll get six answers.
Focus you must.

I think you do not quite understand how this all works. Animal resources change every so often, from a few days to every 2 weeks. On the change a resource is said to "shift". If the shift is good, that is what you go after. Only grinders (and Architects making furnature and some Tailers stuff) want the bad stuff. Sometimes no one wants it, so you use it for traps, camps and maybe Camo.
How you figure out which is which is best done on your respective trade forum for your galaxy. The big ticket stuff is usually Wooly Hide and Avian meat, although Insect Meat, Herbivore Meat and Domesticated Meat are used in some formulae. What you are looking for is OQ, SRand UT on Hide, but be mindfull of MA. Docs and Chefs want OQ + PE > 1400 in thier meat. Docs also would like hi DR and Chefs like high FL. Just so we are clear on all this 2-letter bits: it comes from the two-letter mneumonic for the resources seen at swgcraft.com, which you should check and contribute to if you know the info is old or incorrect.
In order of importance:
OQ = Overal Quality (this is the most important)
PE = Potential Energy
SR= Shock Resistance
UT = Unit Toughness
FL = Flavor
DR = Decay Resistance
MA = Malialability
Another suggestion: don't take specified contracts. I only deal with merchants that have open offers of "Now taking Dantooine Wooly Hide (Apviveo), 35 Cr/U". One thing you want to be clear on with the merchant is what is listed as "Resource Type". That is the unique name that ties it to the stats the merchant thinks he is getting. If it's a different name, it has shifted and you will have to reverify that they still want it.
After all that up there that I typed, the short answer is: there is no "best" import, it all up to chance.
