does the fishing pole stat and different type of bait really have a positive/negative influence of your catch? =P

Yes. Low end poles bring in junk like broken datapads. With a 70 Pole I stopped getting junk. I'm not saying that is the cusp, I just never got them with one. I compared my 70 and my 99 pole. While I can't call my test scientific by any means, I did keep track, and ran about a hundred tests with each. Per turn in the mini game the 99 pole got Nibbles more often, and nibbles lead to bites at a higher rate.

I heard of somebody fishing out a force crystal, a pair of shoes and Eyes of Mesra. I have a 4% pole for testing one day when I get really bored. lol

I noticed a real big difference when I went from a 40% pole to a 100% pole.
Type of bait doesn't seem to matter.
