Your best bet for such info is to check out swgcraft.com. They are usually pretty well updated and you can even make resource filters to facilitate finding the resources you desire.

Look for a channel called RIN on your server - many have them. 
If there isnt one you may want to create one! It can be very useful for communicating with other Rangers/Scouts/Docs/Armorsmiths/etc. But it only works if you use and promote it!
Also I think SWGCraft has a site where they track those things - but likewise it depends on the players to update it as soon as a new resource shifts in.

I have a question. On swgcraft.com when it tells you the name of a resource type, how do you find out what animals drop it?

Well, you can do an advanced search on swgcreatures.com. There you can filter you search by all sorts of criteria such as plantet(s), resource type, and even creature level...
