I know that higher level creatures yeild more resources typically. I also know that allakhazam lists what type of resources are dropped by which creatures.

has anyone ever done a comparative list showing all the creatures on a given planet that drop a certian type of resource and which drop on avg more units per harvest then the others?

Harvest is determined by CL. Go to www.swgcreatures.com and hit advanced search. And that will give you the info you want
