I was thinking about remodling one of my characters as i enjoy hunting Rancors. If I got swamped with 4 or more rancors, I would be in trouble and mostlikely die (TKM). That's why i wanted to remodle my character and do fencer/TKM to increase my Melee Defences. Doing so and I'd have to drop the Tracking line in ranger. Big mistake.
My best record for Carnivore Meat was 70k (using 2 characters) in 3 hours (1 set of buffs). Only reason i got so much was because I had Exploration 4 on one character (had MDoctor too to heal)and Tracking 4 on the other, both on +22 vegash).
After dropping Ranger I tried hunting Rancors again. Without /areatrack, it was extremely hard to find them around their usualy spawning area. Never realized how much I used /ar to find those enraged rancors for big drops. In 3 hours, I didn't even get 25k...i was soo pee'd off; and that's between the 2 characters
Here's some backround info: I never used armor when hunting rancors. Last time I tried it, I had bad kinetic resist composite with 1k emcumberance. It ended up killing me faster (even while buffed) than without it. I shy'd away from armor from that point on (6 months).
While leveling fencer, i figured I'd buy some 75% Kinetic Ubese. OMG! it was soo helpful. No more than 5 damage while leveling One-handed 1-4. I couldn't wait to try it on the Rancors. WOWZA! No more worrying about getting Octopled by a lair of rancors! After clearing a few lairs, i realized I didn't even have to use a stim to heal myself.
That's where I realized i made a mistake. I had ~12.5k meat in my inventory after the buffs wore off (3 hours). I nearly shot myself!
So basically what I'm saying is that I'm picking up ranger tracking 1-4 again as it's well worth it. I can't vouch for the rest of the profession as it seemed like a waste of time/skill points to me, yet tracking has great advantages.
With that said...something needs to be done about lesser drop creatures (ie. rasps on talus...most likely the best avaian meat on any server at any time, yet only 10 meat per drop...and gulginaws don't spawn readily)

I suppose it depends on what you're tracking and where you're tracking. Every single time I've tried to track something (I haven't tracked rancors) I either found it through luck, making the time spent tracking a waste, or it wasn't there when I got to it. Maybe that's just back luck on my part, I don't know.
