You'll find this info at swgcreatures.com. With the advanced search tool, you can pick your planet (or all planets) and then the type of resource you want. It will return a list of appropriate creatures.

I belive (but correct me if i'm wrong) if something has "Domesticated" in front of it, you will only find it in random spawns of people (eg: moisture farmers on Tatooine) with the animal as a pet

Your best bet would be the mawgax. With the master ranger harvesting mod, you'll get a decent amount from harvesting them. I've never ever ever seen good stats on it though.
