Funnest? Guess that's going to depend a lot on your idea of fun.
I mean, there was this one time me and a friend 'streaked' the Corellia racetrack wearing nothing but our bright whites, cammo and a big grin...
Or the fishing trips on the beach at Naboo
Going on an insane trap flinging frenzy on Dantooine was 'fun' in a "good grief, look at the amount of xp" way.
Then again, sitting in camp near a biggish town, cammoing up visitors, chatting with my doc friend as he gave free buffs to greenies and just hearing how the new players thought their game would go...
... or mask scenting and sneaking into the squill cave, chatting to that nice hermit guy and not getting killed while all around the uber133t were getting sprayed across the walls despite armour, buffs and heeyuge guns.
Getting 'just another couple of thousand' units of meat for the grinding medics...
That moment of insane glee when you realise you just laid out a big critter and THEN realising you'd forgotten to put on armour
Biggest fun. After the GRM's I usually find myself in Bestine, Anchorhead or Eisley, pulling together a mottley assortment of green players looking to gain some XP in whatever profession they're running. Heading out to the squill caves with a dozen or more green droids clattering and farting away...
...what could be more fun than that?

In addition to all the fun things you can do in groups, you can also do some solo stuff:
--Visit every planet, find as many different creatures as you can, take screenshots of the /examine screen as a souvenir, and kill the innocent critter if you possibly can.
While doing that, you can also do:
--Go explore the remotest parts of the planets and camp on the highest mountain you can find.
--Try finding the POIs without using the planetary maps.
