Also off-topic, my template I'm shooting for is MSL & MR, can anyone give some numbers I can expect for hitpoints? And... these two professions will bring me to 80, right? I know they do with a combat profession included with either one of these, but I'm a little unsure on this combination.

You will be CL 80. And, even if you weren't, you'd probably still be fine in a group (as your CL would be boosted to 80, except for the health part).
