Where can I find some info on the city cap (how many level 4 or above slot are left) of my planet and galaxy? (Corellia, Corbantis)

Quick answer is you can't. You have to do the sleuthing yourself.

1. Go the the planetary map and count the number of registered cities on the map.

2. Select find all cantinas or banks or cloning centers. See if you can uncover any cities that aren't registered.

3. Go to a shuttleport and count the number of PC destinations, that should be the number of level 4 cities. I can't imagine a level 4 city not having a shuttle.

You do not have to go to a shuttle port to see how many shuttleports there are though. Can't you just see that on the planetary map as well?
