Does anyone know if there can be only one cantina in a player or if there can be as many as we want ? (provided we find entertainers and chefs to place them)

Our city has 2, so I think it's safe to assume you can place more than just one

depending on city size you have a limit to city structures. you can use this limit in any way you want except for city halls.

Cantina's aren't civic structures they are unique to player city homes. If you were a town purely made of entertainers and crafters you could probably have the entire thing made up of Cantinas. I would advise against it but it would be theoretically possible.
