Now I know this isn't exactly unique, but how about a Mall? I would love to see this as an actual building.
In our city our regular cantina was getting very crowded!
So...we place a guild hall - had Swiper decorate it - and now we have a huge ballroom instead of a small cantina.
We also placed the BH terminal and general mission terminal on the roof of the cantina (guild hall).
We have a few jedi so this cantina (guild hall) is private. Jedi or overts can grab missions on top of the cantina in complete safety. There is nothing quite like hunting for bols to the sw and you find yourself laying on the ground with a BH or other overt attacking you while the mission choice screen is up. The BH terminal is only accessible to people with admittance to our cantina. This way a roaming BH can not just grab a jedi mission and start blasting.

we have:
GCW HQ, museum
Guild storage (nothing special there)
a ZOO, our resident BE has created pets (non working) and put them in a PA so we can see all the different kinds, although he has had to move it so it is back under construction
Jedi safe houses
a mall (nothing special here)

On my Estate, we have several unique buildings.
The business house itself is probably one of the more unique malls/shops I've come across, and many of my customers tell me the same thing. It's not a mall, but houses 19 different vendors. It not a multi-merchant shop either, since all the vendors are ran by me and my husband's accounts. It's simply the House of Makarha, our business.
The guild hall for the guild, is Kyphi's residence and named the Estate manor house. Downstairs is a dungeon, upstairs is featured on one of Garva's Homeshows. The main floor I just cleaned up in preparation for finally finishing decorating it.
The cantina is the business office, or throne room, audience chamber... combination there of.
The new cantina on the Estate is the Entertainer Memorial, unique in itself. (See the entertainer forums for more details.)
The bio-lab is fun too, still a project in the works though. It was built before we were able to place a medical center. It has a triage center, and a morgue downstairs. I think the morgue is what really gets people when they take the tour of the Estate.
The forge is more of a droid display room, and guild crafting building, like the bio-lab is for food/chem.
Then there is the Imperial Officer's Retreat. Just what it sounds like. Has a lovely reception hall, a piano/concert room, a full kitchen, a full bar/game room complete with pool table, private bath and bed upstairs, barracks downstairs.
We also have a small treasure house, and an art gallery, several slave kennels that have been decorated, and many personal residents that have a unique look to them (they are definitely bachlor pads).
Other buildings I have plans for are an intelligence center (Kyphi is suppose to be a Master Spy after all), a gothic night club (or maybe a disco, we haven't quite decided yet). The city hall I finally have an idea for that I'm really getting excited about building. I've always wanted to do a spiderweb with spider (see the Halloween Homeshow). The asteroid loot drops gave me the final spark of creativity I needed to fully visual the project. A cave, with glowing thingys, spider webs, spiders, waterfalls, crystals... maybe a temple or altar in one of the rooms, and maybe the intel center in the other one. I also tested to see if you could drop a vendor if you were both merchant and politican... and you can. And I've been collecting treasure maps like they're going out of style. I was thinking of putting a vendor in my eerie cave of a city hall, with nothing but treasure maps on it, and any sales from the treasure maps go into the city hall funds. Or even a few quests npcs/vendors...
So many ideas, not enough hours in the day.
