Hi there just another Combat Level question:
1) If I am grouped with a CL10 pet and I am CL 80 will the pet adopt the CL80 if I use it as a tank?

This is a question better suited for the Creature Handler forum. I'm really not sure how it handles pets. I would think it would be considered level 80 as far as the damage modifiers go, but your pet is still only going to have its normal abilities. I'd ask in there and they should be able to help you out just to be sure of what I said.
