Off the top of my head, here's some ideas:

BALANCED:

H 950/300/300
A 950/400/400
M 1000/400/700

EXTREME (if you have a Doctor alt or always play with a Doctor):

H 850/300/300
A 850/300/300
M 1000/500/900

I don't play a Zabrak ordinarily, but I think 700 is your minimum Willpower. Generally, in PvP you want balanced bars with a longer Mind bar. If you use Doctor buffs/heals a lot (most people do), then you want to pad Mind/Focus/Willpower as much as possible.

What is the best stat setup for a good pistoleer PvPer?

You haven't given us a race. Do you have a doctor character always buffing you? Do you have Novice Medic? All of that matters.
