composite is assault armor. If you're going to go MBH, keep the composite as BH will give your your assault armor mitigation. If you're going to go smuggler, convert the armor to recon armor.

As for the profession combo, it really is up to your playstyle. I don't think there is a single best combination. MBH will give you some good defensive mods and decent damage. MSmuggler will give you more crowd control options. MRifles will give you more accuracy and damaging specials. MCarbines will give you some more acc and a few more crowd control options. Obviously, medid/doc will allow you to heal and CM will allow you to apply diseases, bleeds, and DoTs. The melee profs will give you more defense and you'll be able to switch between melee and ranged (but your accuracy and speed will suffer somewhat.) Scout/Ranger will be good for creature hunting/harvesting.

Choice is really up to you.

One of the things I like about the CU, that I am discovering is more and more true lately,is that there is no good answer to that question. I think it really depends on your playing style (PvP vs PvE, solo vs grouped, whether you like doing other activities than pure combat, etc), and what is fun for you. Personally, I am finding that MBH/MP/Medic is a good template for me, but I wouldn't go so far as to say it's the best template (it's probably not). I think MR/MP/Medic could be just as good (better in some ways) and may try that one out temporarily for fun before the respec is over, along with some combo involving Smuggler. The possibilities for good templates are endless.
