What would be good stats for a human pistoleer?
I thought about 850 health and action, 700 mind and the rest of the points distributed evenly among the other stats

Good/bad?

That seems low on health to me. I don't think strength is very important for a pistoleer but constitution is. I am not sure what your strength would be but you might make it lower for a higher Health.

You won't have a great need for focus or willpower unless you are taking medic as a sideline.

Max constitution, and max stamina.

Okay, here's the deal. Once you start hunting some higher level MOBs, there are critters out there that target your lowest stat. I see wookie and trandosian brawlers running around with almost no mind stats. 2 head shots and you're done for. Max out your health and action and then try to survive at Fort Tusken when those Tusken Rifles start hitting you from long range. Say good night, Gracie.

I think boosting your Health and Action is good, but not to a point where you won't have any mind stats left.

I've been at fort tusken...
My only problem is running out of action thanks to expensive special moves. I let some other poor guy get hit, like the TKAs
