Speed caps at 100, at which point the current formula theoretically allows you to fire a weapon with a speed of 25 000 at the speedcap (... isn't that l33t?).
Accuracy, as far as I know, doesn't cap. The defenses you'll be countering with it does though, which is one of the reasons the Desperado line of bounty-hunter is so useful (gives extra accuracy (and pistols speed)).

accuracy doesnt cap, speed cap for any speed weapon on any special is 100.

Anyone knowhow FS skills like the Ranged Accuracy and Ranged Speed skills work into this? Do they stack over a cap of 125/100 or is it a moot point if you're already up there?

and at what point is this? heh .. 125? 130? 150? 200?

I don't think that point is as clearly defined anymore.
Previously, to-hit calculations aswell as a defend-calculations had a "roof" and a "bottom" (a range) depending their value. If the opponents accuracy roof is below your defense bottom, he couldn't hit you. On the other hand, if your accuracy bottom is above his defensive roof, you'd hit everytime.
So recently, they removed the skill based bottom from both calculations. Now there is always a chance your defense/accuracy will kick in, no matter how high your opponents accuracy/defense is. The higher the accuracy you have, the less likely is it that the dice roll favours his defense, since it will be a smaller "window". But, as I said, there is now a window, after the removal of the "bottom" caps.
Which means an increased acccuracy will continue to give you benefits way beyond the old effective accuracy cap. No clue where that one was though.
(On the other hand, with pikatta pie + 91 ranged def + capped dodge, your still a real tough cookie to hit

He didn't mean the kind of cap where you have all available skill mods, but the one where further skill mod additions stop being effective. I hope that's what he meant anyway.
... besides, you forgot to include the FS skill for Enhanced Ranged Accuracy.

that sounds about right
in all honesty, i would think around 150 would probably be more than enough for most situations, but since the formulas have changed, it's really hard to say since i don't really know the new ones
also with the above suggestion with eating some dodge food (also remember you can still stack up to 25 more melee/ranged defense and dodge with skill tapes and BE clothes), and cob, some people end up very hard to hit, even with your accuracy well over 200

There is definately a Pistol Accuracy Cap.
Train Master Pistoleer and BH 0040.
Then add +25 Pistol Accuracy While Standing, +25 Pistol Accuracy While Moving, and+25 Pistol Accuracy by using Skill tapes.
There is no other way to gain Pistol Accuracy.
Unless you count Aim or Citros.
