I am a Master Smuggler and Pistoleer 3-4-4-3. I should be done with Master Pistoleer in a few day. Anyways, what professions will I be able to pwn once I get Master Pistoleer? What professions should I watch out for when PVP'ing?

to really put the smack down, you need to hit the speed cap so you can use last ditch as fast as possible. but to do that youll need BH pistols, and then you get attacks that can be better than last ditch in the right situation (torso shot or eye shot).
so itshard to say, pistoleer isnt all that deadly on its own, but its well rounded and makes a good base class

You won't really "pwn" anyone, sadly. You will have an easier time against some compared to others, but without skill tapes enhancing your speed and accuracy, you're pretty much asking to get killed. In response, however;
Easy Kills (Just single profs by themselves. Does not include defense stackers):
1) Pikemen (just stay out of range of their DoT lances)
2) Swordsmen (again, stay out of range)
3) Carbineers
4) Other non-smuggler pistoleers (Use last ditch on them)
Watch out for:
1) Riflemen (High accuracy and good range. Make them come to you)
2) TKMs (dont let them get in range.. kite them and you should be ok)
3) Fencers (Without enhanced accuracy, a fencer + CoB = unhittable... run! They also tend to have DoT weapons)
I'd suggest going TKM (you will have enough skillpoints to do tkm/master pistoleer/master smuggler) to be truly effective with master pistol + smuggler.

I've been a master pistoleer/smuggler/teras kasi for over a year.
There isn't one profession template that can beat me in a 1:1 when I am using only pistols other than Jedi. Jedi have an incredible strength to block ranged attacks and a incredible weakness to die to melee attacks.
I use only the smuggler pistol specials in pvp, when raiding a base I will from time to time use fanshot to clear the NPC's quicker.
The most key thing you can do for your char is obtain the speed cap. If you have to do with through skill tapes, force sensitive skills or a combination of the two (you can get ranged support 1 and 1 force box, or 3 force boxes with the triple master template I have).
The second most important thing will be to make sure your guns are fully scoped for accuracy.

Please learn about pvp in this game before giving out inaccurate information.
Out of all the combat classes, I would say that rifleman consistently die the quickest against me. If you keep close, your accuracy is up, theirs is down. I've never been in danger of losing to a rifleman in a 1:1.
Your comments about fencers is also wrong, they are very hittable. The best move in this game is intimidate, it removes the ability to dodge/counterattack/block and halves the damage output of the intimidated opponent.
The only thing that will give you trouble if you obtain the speed cap and use scoped guns is people who abuse groupTEF (post your support to have it removed on the GCW forums). When you get groupTEFed, and it appears you wont be able to kill them all before you die, feign death is your ticket out of the cheap situation.

This is anotehr great way to obtain the speed cap. BH pistols gives +80 speed, Master Pistoleer gives +74, you need 94 to cap. You could get dirty fighting, BH pistols and master pistoleer. There might be other combinations aswell. You get a special attack that targets the mind pool and other cool moves.
The nice thing about being TK/Smugg/Pist is that you are prepared for any situation. You can take out the Jedi and NPC's that aren't really vulnrable to ranged attacks (like nightsister protectors) with ease, versus struggling/dying if you are limited to only guns.
A neat tip if you decide to go triple master is that unarmed toughness is uber. If you get KD/Dizzied and are flopping like a fish to get back up, you can unequip your gun to put you in TK mode, which allows you to absorb damage much better than if you left your pistol equipped.

I have an 1800 combat rating and pvp 24/7. Pure Pistoleer vs pure rifleman and you'll lose. Same for fencer. We're pure prof vs pure prof.
