This is just his basic plan. Throw in some high mind DOT weapons, some thakatillo and synthsteak, some brandy and music/mind buffs, and a healthy dose of doctor buffs and you end up with a plan that is VERY difficult to beat.
What can a Jedi (even a Knight) do vs. this plan you might ask?
There are a couple of answers to this question. One is don't fight him. That's the easiest answer. If it doesn't benefit you, or it's not fun, then why bother. If this isn't a good enough answer or you have no choice for various template reasons. Then your only option is to be prepared.
For one, accept that you are going to be intimidated, stunned, blind, on fire, diseased, poisoned, etc. As long as you have full buffs you will never lose more than about 1000 from any pool due to wounds. If you can stay on top of the pool damage you should be okay, so always get the mind buffs from the dancers and musicians. Also bring lots of food.
- If you want to avoid the whole KD+Dizzy thing you are going to need some thakatillo.
- If you want to mitigate the effects of 1000 wounds you will need some vercupti.
- And, if you want to actually be able to hit this ... gentleman, you will need some snow cake.
I am not going to tell you how to fight the fight or which saber to use or which saber/force specials to use. That is something that only tactics and timing can determine. My only suggestion is that if KD doesn't work the first 5 times dont bother with it. He is probably using thak, so switch to posture change "/saberslash2". Also, if you see numbers like
-20 +bodyhit+
Don't freak out. It won't last. He is eating synthsteak and this means that for the next 30 hits or so you will do less damage. He may eat more, but most synthsteak is about 30% filling and lasts for 30 hits, so figure that until that wears off you might as well just focus on stating/KDing/posturing/bleeding him. Nothing else is going to help much. If he insists on keeping it up, you will have to wait about a minute and a half before you can start laying into him for some real damage. Big deal, this fight is going to last a while anyway.
So, yes try to ignore intimidate during the phase of the fight where your opponent is using synthsteak. When his belly is full and/or he stops eating it, then you can deal your damage, at that point it wil be a battle determined by whether he can keep you warcried, intimidated and postured/KD'd. If you can get your own posture changes or KDs in, you maybe able to clear intimidate and land some hard hits on him.
Obviously templates involving enhancer or force wielder will have some extra options like armor, intimidate, choke, forcerun1, weaken, etc. Use what makes sense, but above all else, focus on your saber buttons more than your heal buttons.
Also, as a final word of advice: hotkey a holocron.
May the force be with you.

A nice word for a jedi who can't defeat a melee stacker:
NOOB
So I take it you are a Jedi, and I take it that you have never lost to a melee stacker? Trying to kill a well prepared, well trained, melee defense stacker with a Jedi is no easy task. Anyone could lose such a fight given different circumstances. Ie. my stomach was full when the fight started, my food wasn't uncrated, my force pool wasn't maxed, he has a friend BH who is attacking me at the same time, there is no water nearby... I could go on.
Judging by your posts I would guess that you are basing your entire knowledge of what it is to be a Jedi off of your friends' experiences. I don't know how your friends perceive fights vs. melee defense stackers, but my guess is that if they are not EXTREMELY wary of such people, it is because they have never met one that really knows how to duel. A good melee guy can give even a knight an extremely hard time. They can use VERY powerful weapons (read legendary/exceptional), hit at the speed cap, use high powered DOTs and intimidate you with a zeal that borders on religious.
Sure there are Jedi templates that do very well against normalplayers, even against these uber melee guys, but usually such templates have other issues. So it becomes a decision: Do I want to be able to kill melee guys, do I want to be able to kill Jedi, or do I want to be able to kill large creatures? Tough decisions.
The rude comments like NOOB don't exactly demonstrate a real understanding of the issues. Instead they make you sound like the noob.

Not true.
1 on 1 ive never lost to a D stacker unless (s)he has an exceptional DoT weapon. No exceptional DoT weapon and im golden. Not that a D stacker isnt a challenge mind u. Very difficult to handle yes... but impossible.. not at all.
Is this the coolset pistol in swg ever!? I think so, even cooler than the DE-10. "Matter of taste though"
I think it is very Lame we Pistoleros cant use it, now we cant even equip it for the looks of it! And it did some pretty decent damage to. Why oh why cant Pistoleros use it to?? How about it is and other pistols are certed for multiple professions?? It makes no sense. I guess som other profession has it the same way to! Atleast carbs.
Enyone know if this is beeing looked at? not just for us, but in whole?
A Master Pistoleer cant use the Pistols :/ weird!
