ALL defenses are hard capped at +125, but food can carry you passed this point. So with master fencer you only really need the first box in the grips line. Think about the Teq line as well. Some nice def vs stuff in there that really compliments fencer well.
I have a Mpistols, 4/4/4/0 fencer, DF, 4/3/0/0 TKA, nov medic build on Shadowfire. For a pistol user the guy is a tank.

Keep in mind this important point.
I know that the CU is months away but it might be a good idea to focus on one or the other (pistols or fencer) since your dodge won't carry over from one profession to the other. Getting a good feel for the profession alone could do wonders once the CU finally gets here. Of course they could totally revamp everything about every profession so it might not matter at all 
Just a thought.

i'm going for fencer, and pistoleer for the dodge point.. master fencer get's 115 dodge points alone, with pistols, a total of 185.. i heard something about a cap? if so, do i need all the 4 pistoleer dodge boxes? or just the first 1 or two?

my current pistol template is mpistols/dfighting/tka0304/fencer4430/medic 1000 and i think its pretty fun
