Do you have to be using a pistol in order to use dodge or the defenses that are granted by a pistol?

Can i dodge an attack while using a rifle or melee?

I think you need to be using a pistol or 1H weapon.

counterattack, dodge, and block are weapontype specific. 100 dodge, 100 counterattack, and 100 block only go into effect one at a time depending on your weapon.

125 is the new cap, which food can take you over, such as air cake, pudding, etc.

I am uncertain if skill tapes work if you go over 125 or not.

Will Dodge work just as well kneeling as standing?

Not sure about 'just as well' but I know it works both kneeling and lying down. When I had master pistoleer before in a firefight I could move 30m just rolling from the dodge animantion when I was prone!
