A MoCap session shouldn't be out of the question. Look at the list of things in the pipe for dancers. New flourishes. That CERTAINLY had to have taken a MoCap session. So that really is no excuse to not put dual wield in. Nor should the ability be handicapped to the degree that by the time you earn the ability, it wouldn't be worth it to actually use it.

Zam Wessel was shot with a dart (Kamino Saberdart to be exact). As far as I know, all scouts have the ability to attack with darts. So Jango somehow got ahold of a dart that can kill a non-animal with lethal poison on it, and used that.

Not sure I buy that it would fall under a trap. It was shot as a projectile which carbines are projectile weapons, and all the traps I've ever used are thrown. Also, can't think of any traps that have killed anything. Maybe if she became real sleepy I could see it being a trap.

How about this, why not just make a 2nd pistol visual only???

We already have 'fake' blaster bolts shooting(3 bolts per 1 round of actual attack), so why not just make the 2nd pistol bolts "fake" too?

Of course this still requires motion caption/modeling but it eliminates any risk of imbalance or overpowering.
The ones that want it for the look can have it, and the ones that want single pistols can have it too, and both will perform exactly the same - just look different.

Beat me to it, but I completely agree...For starters, just make the darn thing "LOOK" dual-wielded

I have a hard time understanding why dual wielding pistols would be difficult to balance. Make the pistols fire alternatly. Say you have a 1.7 spd pistol in the right hand and and 3.0 spd pistol in the left. Combat starts with the right hand pistol firing. 1.7 secs pass and the left hand pistol fires. 3.0 secs pass and the right hand fires again. This offers no statistical bonus other then equipping pistols with 2 different damage types (ex. fire/acid). Everytime a weapon fires it does normal damage and delay. The damage type advantage is minimal, as most people would use the best damage type vs their oponent anyway. In Ep 2, Jango Fett alternated shots with his pistols also, so it is backed by film continuity. My 2 creds on it anyway.
