I'm going to start a list of "Events" that can be run by anyone on any server as a way to increase the number of Pilot activities available for people across all servers. Feel free to use any idea you read and modify it to suit your needs. Feel free to add a short description of a new Event that makes some use of Space or Piloting and I'll try to keep a complied list.
Personal/Team PvE competition: Go alone or form teams (often with a POB base and escort fighters) and compete for kills against certain types of NPCs. I've done this with groups of Rebels in Deep Space where Decimators and Imp Gunboats counted as kills and the escort fighters were only supposed to do anti-fighter and anti-enemy-Pilot actions while the POBs where racking up the actual points.
PvP Tournament: One on one, group on group, single elim or double, furball with last Pilot alive... lots of variations are out there. Run it as a factional Overt Tourney and advertise it to crashers, or run it as non-Overt and make faction irrelevant by using /duels. I guarantee the Ego trips and bragging will last for weeks, if not months.
Control the Waypoint: This idea lends itself to group vs group PvP situations. Often run in Deep Space (but I've been to them in other locales), they can be PA vs PA or be very open to anyone who shows up.
Corvette Escort: Successfully run on Kettemoor, this is also group vs group PvP. The idea is for groups of Overts to gather in Kessel near their side's Corvette entry point. The first side with a Corvette enter becomes the defenders, and the other side attempts to destroy the Corvette before it leaves the system.
Stunt/Trick Flying Squadron: The idea has been raised, but not successfully organized to my knowledge. Think of it as an SW:G Space version of the Blue Angels/Thunderbirds, that can perform precision group maneuvers as a non-combat display of flying prowess.
RP Escort: High ranking Officer/Prisoner/etc in a neutral POB ship is escorted by a flight of Overts (or use /duels, but goin Overt is usually easier). Set rules about what it takes to "control" the target ship, the speed it travels, etc and set up end locations for each side to try to get the target ship escorted towards. This also works as a good follow up or lead in to Ground RP settings.

Ironically i think this is what the developers had in mind with the ORIGINAL kessel.

I would say "Understandably," rather than "Ironically." I do not disagree with the decision to remove the threat of PvP from the ability to finish a Profession. It's unfortunate that that decision had other consequences, but it did. Having players re-create enjoyable content that was removed (for other, valid reasons) should not be a surprise (which, by definition, means it isn't ironic

Ya i agree. I guess ironic isnt the word for it, but i do personnaly see some irony in the suggestion for player created content which was the orginal intent of the orginal content.
I also agree that the master mission shouldnt have been there. What i find unforgivable is that that kessel as a PvE sector was a supposed to be a temporary thing until they reworked a new master mission -at which time kessel gets restored.
Of course, we all know how temporary has become permenant.

Well, this had already made it to page 3. Is there no interest in something like this? Should I just let it die and handle occasionalEvents on my server as I see fit? Seriously, what the hell?

Message xTekx, Ayanami, Maudee, Starscream, Bic, Nesayna, Nearro, or pretty much any other pilot you see flying on bloodfin regularly for the specific's detail game mail.

I like the idea of the stunt flying one. I always wanted to give that a try wth a bunch of A-wings.
I'd implement it by setting a course of mirroring waypoints probably.
