I can equip two weapons at a time, but I don't seem to fire two at a time. Anyway to fire both weapons at the same time or at least be able to control which I shoot at what time?

Yeah, get a Y-Wing "Longprobe." The regular Y-Wing requires a second player to be in the turret to control the second weapon. The Longprobe does not.
