Why are the heavy z95's so much more expensive than either of the Y-wings? Isn't speed, pitch, yaw, and roll determined by the engine you put in them? Or will a z95 automatically maneuver better with the same engine? I'm not sure why a heavy z95 is around 300k but I can get a y-wing long probe for 75k.

Aheavy Z95 is probably the only ship you will need to buy nowadays so in the end you come out way cheaper. And all post-ROTW ships (heavy starter ships, JSF, bellabub) have high mass and extreme maneuverability (PYR acceleration) while only the max turning speed (PYR max) is defined by the engine.
For rebels this trade-off is a bit more tricky though since we either have relativelyslow and sluggish ships with high firepower (Y-Wing LP, X-Wing) or those ROTW ships or other interceptors. You can still decide to go with firepower (which is msot important at low level PvE) while Imperials dont have that choice. Their heavy starter ship makes most of the other ships obsolete.

Very simple, the Heavy Z-95 requires 2000 units of asteroid resources. The other ships don't. Asteroid mining is time consuming so that works into the price of the ship.
