OK - I'm hoping that this is something stupid that I'm doing and can be sorted, and not some sort of evil bug that only I've got.
Every (3 so far) time I get near the Vette, and start to kill off the escorts the Vette hypers away.
I'm launching the bombers, then going in for the fighters - as soon as they are all dead the Vette just runs - leaving me with a two hour wait for it to do it again - so is it me, the curse of the Vette or am I just bugged to all hell and back?
It's not like it's only getting meannoyed- as soon as I start the attack I send out tells to get a team in to help me fight it - they usually get about 8k away when I have to send out the "It's gone again" tells. Like they are going to come and help if that keeps happening - so I need a group to fight it, but the fact that it keeps running is destrying my chances of getting a group to come out - words escape me in describing how irritating this is.
Any help at all would be great.

Depends on when/where you find it. The vettes pop in about once every 2 hours or so, and take something like 30-45 minutes to follow their path, at the end of which they hyper out. Last time I took the vette down, we disabled it only 500m short of the end-point. Here are the WP's, as best I know them:
Imperial vette: Starts at 7344 7550 6268, leaves at -6650 -245 -6258 (the exit is very precise, if you see the two gunboats hugging this point, you have to kill them before the vette can respawn).
Rebel vette: Starts at 7367 -7585 -7534, leaves at -6497 4854 6190.
I don't know if they take a straight line or zig-zag. I think I saw the rebel vette take a course correction or two the last time I chased it.
