While I'm ashamed to post this, I must. I cannot control my ship - how do I do it?

That is to say, I can control it, in that I can make it move, but I cannot:

1. Make it go up and down - it only goes forwards and sideways

2. See where it is going - my camera is always facing the same way, so unless I always go in that one direction, I can't see where I'm going

Just to let you know, the in-game help was totally useless. Pressing "Insert" does nothing for me, my mouse does not control the camera in the least. It's just a cursor running around.

So can anyone give me a step-by-step, button-by-button list of how to get things sorted out, so I can actually fly?

The reason that only astromech droids should be able to enhance ships... Think of a protocol droid:
"Oh, we're doomed!"
"I can't say how much I hate space travel!"
"The odds of surviving a direct assault on an Imperial Star Destroyer..."
"This is all your fault!"
"But sir!"

Need to know a couple things.

Are you using a stick, gamepad, or mouse to control the ship?

If you're using a stick or a gamepad, have you tried updating drivers and calibrating?

In flight, your camera will always face forward. That's the way you're going, so that's where you need to look to see where you're going. The ship will always move directly forward when the throttle is engaged (ie, there are no directional thrusters to make it rise or fall, or move side to side).

Mouse controls work in 2 ways. The default mouselook mode will steer the ship (pitch up/down, yaw left/right). In default mode, the arrow keys on the keyboard will roll the ship left/right and control the throttle lower/higher.

To disengage mouselook mode, hit the alt key. This will bring up more HUD elements (such as the toolbar familiar from the ground interface), and allow you to look around the cockpit by moving the mouse. This is the default action of the mouse in either mode when there is a stick or a gamepad connected. IE, if you're using a controller, you would have to manually change the settings in order to also be able to steer with the mouse.

If you're using a stick or gamepad to fly, there are are a billion different combinations that could be considered default for your controller in regards to steering the ship.

However, it seems like the gist of your question (which, if I'm reading it wrong, I need more information to understand) is that you can't make your ship strafe or rise/fall. That's because there are no directional thrusters. Only the main engine and/or booster thrust from aft that propels the ship forward.
