hope this comes out as explainable... but one method i find works when i'm being overwhelmed in dogfights... as it can take some practise to work right...
is look out for on the radar for the clumps of fighters, weres theres 2/3/4 fighters all flying in formation together and go crazy...head straight for them... shoot alittle at all of them if you can, send them into evasive mode as such, take one (or two if theres alot)out, and look for another clump of fighters on the radar.
You can just disable them, be taking out engines, some find this a good method,by slowing down the spawnsin the process, but make sure you destroy them later before they auto-destruct or else i notice you dont get any xp.
You have to learn to use better and different tactics than just standard dog fighting rules, take advantage of there AI, and "scare" them into evasive mode and to fly out of formation. This works to stop the bigger formation of fighters tailing you and blowing your ship to bits all at once, if there all split up, and out of formation there alot less effective to your sheilds.
As you like to fly an x wing also, i recommend you get yourself a mark IV engine, high speed, 95+ 65/65/60 rates (or near enough), thottle it to about 60% to 70% full power when in a dogfight and you'll find yourself very manourable for an x wing. Also if your trying to avoid being shot, if you pull up or down diagonally you can turn alot faster, and thus make you harder to hit, use that to your advantage if you've got lots tailing you, and you need to reverse it asap.
Also i prefere to go with 2 lvl 8 weapons, rather than use all 3 weapon slots and need to use less powerful guns, because of mass i assume.
