You could. But those missions are long. L-O-N-G, long. I don't know about you, but I'd be nearly heartbroken to get to the end of that, and have someone blow me away right before the Mission Complete.

Declaring doesnt change the NPC AI, it just makes you open to player attack and grants the reward of faction points for NPC kills.

Well... In the process where you declare the station asks if youre sure you wish to declare, because declared players of the opposing faction will be able to destroy you
This might give the missions youre on a whole new meaning,,, You would actually be able to lose a mission (gasp!)
IMO none of the missions in this game are a challenge whatsoever... Exception being the Lord Cyysk mission in Kashyyk (took 3 people to do that one, could probably do it solo... -if- I was able to get to the point where it starts lol)
The only -real- challenge in this, is PvP... And in most of the cases thats not even a challenge either.. People are either very good in their AW, Adv, Int, XW, Opp... And they still lose... Or they're flying the "I think I'm immortal" JSF... Which still blows up with a bang
Last case is the "I fly the IG TIE, because its bugged.. therefore I cannot lose" person... Which I just missile...
In short... Declare, and expect them to hunt you... I would hunt you
